Easy Baked Jambalaya

This easy jambalaya is baked in the oven. (Gasp!)

Ingredients

  • 1 small onion (or 1/2 of a larger onion), chopped

  • 1/2 - 1 green pepper, chopped

  • 1 celery rib, chopped

  • ½ cup butter - 1 stick

  • 2 cloves of garlic - or 1/2 teaspoon garlic powder

  • 1 lb. smoked sausage, cut into slices

  • 2-2 ½ cups of cooked, chopped/shredded chicken

  • 2 cups long grain rice

  • 3 cups chicken broth

  • 1 cup chopped tomatoes, or canned diced tomatoes (w/juice)

  • 1 Tbsp. Worcestershire sauce

  • 1 Tbsp. Tabasco sauce

  • 1 Tbsp. browning sauce (optional)

  • 1 tsp salt

  • 1 tsp. pepper

Instructions

  1. In a skillet, sauté onion, green pepper, and celery in butter until crisp-tender. Add garlic. Sauté 1 minute longer.

  2. Optional step: puree tomatoes in blender.

  3. In a greased 9 x 13 baking dish, combine all ingredients.

  4. Cover tightly with foil and bake at 375 for 50-60 minutes, or until rice is tender.

  5. Stir before serving.
