Low Carb Peanut Butter Cookies (2 carbs per cookie)

Ingredients:

  • 1 cup natural peanut butter (or your choice)
  • 1 large egg
  • 1/2 cup Splenda
  • dash vanilla (optional)

Directions:

  • Preheat oven to 350.
  • Mix all the ingredients together. You can add or decrease the Splenda to your own taste.
  • Break off about 12 pieces and roll into a ball the place on a cookie sheet sprayed with Pam. Press down with a fork in the familiar fork pattern.
  • Bake for about 10 minutes or until they have stiffened up. Its kind of hard to tell but they will be firm to the touch. Cool then take off the cookie sheet and enjoy.
